The Commissary Manager oversees the daily operations of the commissary kitchen, ensuring the efficient production, packaging, and distribution of food products. This role is responsible for managing kitchen staff, maintaining inventory, ensuring quality control, and upholding food safety standards.


Key Responsibilities

  • Operations Management: Plan, organize, and supervise daily food production activities, ensuring timely preparation and delivery of products.
  • Staff Supervision: Recruit, train, and manage kitchen staff, creating work schedules and monitoring performance to ensure high productivity and morale.
  • Inventory Control: Maintain accurate inventory levels by monitoring stock, placing orders, and receiving shipments. Conduct regular inventory checks to minimize waste.
  • Quality Assurance: Ensure that all food products meet the company’s quality standards, including taste, appearance, and portion control.
  • Food Safety Compliance: Enforce compliance with health and safety regulations, maintaining a clean and safe working environment at all times.
  • Budget Management: Manage the commissary’s budget, controlling costs, reducing waste, and optimizing resource use.
  • Equipment Maintenance: Oversee the maintenance of kitchen equipment, scheduling repairs and replacements as needed to ensure operational efficiency.
  • Reporting: Prepare regular reports on production, inventory, staff performance, and financials for upper management.

Requirements

  • Bachelor’s degree in Culinary Arts, Business Administration, or a related field (preferred).
  • 3+ years of experience in food service management or a similar role.
  • Strong knowledge of food safety standards (e.g., HACCP).
  • Excellent organizational and leadership skills.
  • Proficiency in inventory management software and MS Office.
  • Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
  • Exceptional problem-solving and decision-making skills.


Preferred Skills

  • Experience in a high-volume commissary or production kitchen.
  • Familiarity with logistics and supply chain management.
  • Strong communication and interpersonal skills.
