Job Overview

Kaayoo The Filipino Kitchen Restaurant is looking for an experienced and highly organized Commissary Head to oversee and manage our central kitchen operations. This role is critical in ensuring consistent food quality, efficient production, proper inventory control, and strict compliance with food safety standards across all branches.

The ideal candidate is a strong leader with a passion for food excellence, process improvement, and team development.


Key Responsibilities

  • Oversee daily operations of the commissary, ensuring smooth and efficient food production
  • Plan, organize, and supervise bulk food preparation for all outlets
  • Ensure consistent quality, taste, portioning, and presentation of all products
  • Develop, standardize, and implement recipes, production procedures, and costing
  • Monitor inventory levels, manage raw material usage, and minimize food waste
  • Coordinate with purchasing and suppliers to ensure timely delivery of ingredients
  • Enforce food safety, sanitation, and hygiene standards in compliance with local regulations
  • Conduct regular quality checks and implement corrective actions when needed
  • Lead, train, and evaluate commissary staff to improve performance and productivity
  • Prepare production reports and recommend process improvements to management


Qualifications

  • At least 3–5 years of experience in commissary, central kitchen, or food production management
  • Strong knowledge of food safety standards, kitchen operations, and inventory management
  • Proven leadership and team management skills
  • Excellent organizational and time-management abilities
  • Ability to work in a fast-paced environment and meet production deadlines
  • Strong problem-solving and decision-making skills
  • Willing to work flexible schedules when required
